Christine's OG Hummus Recipe

Looking for an easy grab and go snack or something quick to whip up for a party?  This recipe has become my personal favorite because it is so easy and delicious. 

I was never really a fan of hummus until I made this recipe.  Since I started making it over a year ago, hardly a day has gone by without it in the fridge- as soon as its gone my husband is asking for more! It's simply a bonus that this recipe is gut friendly with prebiotic chickpeas and garlic and polyphenol rich EVOO.

Ingredients:

  • 1 can chickpeas or garbanzo beans, drained + rinsed (Alternative option: use 1/2 cup dried chickpeas + put in pressure cooker with plenty of filtered water for 60 minutes, drain and use)
  • ¼ cup lemon juice
  • ¼ cup tahini
  • 3 cloves of fresh garlic, peeled
  • 1 tsp salt
  • 3 tbsp extra virgin olive oil

Directions:

Combine all ingredients in a food processor or high speed blender and blend until smooth. You may add a little filtered water to reach desired creaminess.

Yep- that's it!

Try serving with sliced cucumbers, carrots, celery, broccoli or gluten free crackers.

 

Store in the fridge for up to a week (if it lasts that long).

 

To mix it up with fun flavors try these optional additions:

  • 2 dill pickles (A crowd pleaser when I take it to parties!)
  • 3 roasted beets
  • 1 cooked sweet potato
  • 1 cup kalamata olives (pitted)
